MilleEsettantotto 2022 – Lavinium

Usiglian del Vescovo, a renowned winery located in the municipality of Palaia – in the heart of the Terre di Pisa DOC – demonstrates a clear vision regarding its production philosophy. It’s a sort of ideal synthesis between innovation and tradition. The first of the three wines proposed is a clear homage to the history of the property. The year 1078 is when Matilde di Canossa donated the fief of Usigliano to the Bishop of Lucca, forever changing its name to Usiglian del Vescovo. The long-sought balance, diligently pursued by the winery, is achieved through the aging of the wine in barriques and amphorae.

The MilleEsettantotto 2022, therefore, the product of an undoubtedly warm vintage, is obtained from the gentle pressing of whole Chardonnay and Viognier grapes. After a brief maceration of the skins, the grapes undergo natural decantation, and the must is then fermented. The soils, rich in sand (80-90%), with clay, silt, and marine fossils, give the wine softness and the right depth, as well as a savory imprint capable of withstanding prolonged aging in the cellar. The yield is 5,000 plants per hectare. The production is very limited, with numbered bottles.

In the glass, the wine shines with a vibrant straw-yellow color with green reflections. Its consistency does not go unnoticed, nor does its olfactory impact. Initially filled with vegetal sensations, mostly linked to aromatic herbs, it continuously evolves, moving from appropriately ripe fruit – reminiscent of apricot, medlar, and pineapple – to balsamic and mineral effluvia strongly tied to the soil where the grapes grow; the memory of oyster shells and the shoreline gradually becomes the protagonist thanks to the slight increase in temperature.

On the palate, there is a synergy between savoriness and freshness, and despite the moderate aging, the wine is still eager, with vibrant tension and pseudocaloric contribution, particularly engaging towards the end of the tasting. A few more years in the cellar will benefit the whole. Four generous snails. Egg tagliatelle with asparagus and drops of burrata.
