“The Grullaio” in Tuscan dialect refers to the doctor of the mad, and with this name, we would like to pay homage to this wine that drives people “crazy” with delight. A fresh and captivating red, which will amaze you with its lively character and versatility. Produced with short macerations at low temperatures to enhance its characteristics: fruitiness and pleasantness.
VINIFICATION
The hand-picked grapes are transported to the cellar inside bins. After careful selection, they are destemmed and crushed. This is followed by a maceration of 8-10 days, depending on the vintage. The malolactic fermentation takes place in concrete tanks, and the wine then matures in the same tanks until it is ready to be bottled.
TASTING NOTES
Intense red color with violet reflections.
On the nose, it presents itself luscious with notes of strawberry, blackberry, and blueberry. On the palate, it has a soft entry with silky tannins. The finish is fruity and long, thanks also to its remarkable freshness.
PAIRINGS
Recommended with pasta and tomato-based sauces, white meats braised and roasted, white truffle from San Miniato, aged cheeses, and Livorno-style cacciucco. Also excellent for aperitifs.
