1083 was supposedly the year when wine production made Usiglian of the Bishop independent for mass wine. To commemorate this desire for independence, in full respect of the spirit of that period, we named our wine with that date, 1083, emotionally tying it to our desire to pay homage to a territory as ancient as it is unique.
WINEMAKING
Hand-picked grapes are transported to the winery, where they are destemmed, sorted through a vibrating sorting belt and finally crushed. Alcoholic fermentation follows, which takes place inside truncated oak vats, with maceration lasting 15-20 days, depending on the vintage. The wine is aged in tonnaux and bottle until fully mature.
TASTING NOTES
Deep color with violet hues. The nose is very intense, balsamic and complex, with evidence of blackberry and blueberry; long aging determines the tertiary notes of coffee, chocolate and spices. The palate has a warm, enveloping entry with an imposing tannic structure. Very persistent finish with pleasant fruitiness.
PAIRINGS
Excellent with hard cheeses, game sauces, stewed red meats, pan-cooked game, jugged wild boar. Its complexity and uniqueness also make it ideal as a “meditation” wine.
