A timeless classic, an icon of Tuscan drinking.
VINIFICATION
The grapes are handpicked, placed in small crates. They are then left to wither in an ancient barn, expertly exposed to the prevailing winds, for over 3 months. Subsequently, a soft pressing is carried out using a vertical press. The dense and precious must obtained is then started with fermentation in the caratelli, where the indigenous yeast called “Mother” undergoes a slow fermentation for at least 4 years. When natural stability is achieved, the Vin Santo Occhio di Pernice is bottled without clarifications or filtrations to fully preserve its natural qualities.
TASTING NOTES
Amber color with coppery and garnet reflections. It has very intense aromas with hints of dried plums and apricots. Notes of walnut husk and chocolate are also distinguished. On the palate, it is balanced, very spicy with delightful citrus notes. The finish has a very long persistence.
PAIRINGS
It pairs perfectly with dry pastries, typically the classic Tuscan cantuccini. Excellent with fine chocolate. Surprising with medium-aged blue cheeses.
